Ingredients:

  • 1.5 lb chicken breasts
  • 30 oz cannellini beans, drained
  • 8.75 oz can whole kernel corn, drained
  • 30 oz chicken broth or 4 cups water and 2 chicken bouillon cubes
  • 4 oz can fire roasted green chilis or 1 diced poblano pepper
  • 1 cup sweet yellow onion, diced
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1 cup sour cream (add at the end of the cooking time)
  • 1/8 cup minced cilantro (add at the end of the cooking time)

Directions:

Step 1

Add the chicken breasts to the slow cooker followed by 30 oz cannellini beans, 4 oz can fire roasted green chilis, 1 cup diced yellow onion, 8.75 oz can whole kernel corn, 1 tsp salt, 1/4 tsp black pepper, 1 tsp chili powder, 1 tsp cumin, 1/2 tsp oregano, 1/2 tsp garlic powder, and 30 oz chicken broth. Mix and put the lid on. Cook on high for four hours or low for eight hours.

Step 2

After cooking time, shred the chicken into pieces, then add 1 cup of sour cream and 1/8 cup of minced cilantro. Mix well to incorporate, then serve.
