Ingredients:

  • 1 & 1/2 cups heavy cream or half and half
  • 4 cloves of garlic, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried basil
  • 1/4 tsp nutmeg
  • 2 lb russet potatoes, peeled and cut into 1/8″ thick slices
  • salt and pepper to taste
  • 1 cup shredded gruyere cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup freshly grated Parmesan
  • 1/2 tsp fresh rosemary
  • chopped parsley

Directions:

Step 1

In a pan over medium heat, add 1 & 1/2 cups of heavy cream, 4 cloves of minced garlic, 1/2 tsp dried thyme, 1/2 tsp dried rosemary, 1/2 tsp dried basil, and 1/4 tsp nutmeg. Mix until heated through. Set it aside. In your slow cooker, add the sliced potatoes in a circular form, overlapping one another. Season with salt and pepper, then add the cream mixture. Add shredded gruyere cheese and shredded cheddar cheese over, then add another layer of sliced potatoes and just repeat the order; salt and pepper, cream mixture, gruyere, and cheddar cheese.

Step 2

Put the lid on and set the slow cooker to high and cook for four to five minutes. Before it cooks through, remove the lid and add more shredded parmesan on top. Put the lid on and continue to cook it until the set time.
