I’ve tried a lot of salsa recipes through the years, and I can confidently say that this one is the best I’ve tasted. Who would have thought slow cooking the ingredients would bring out so many flavors? Even though this may take three hours to cook in your crockpot, It’s a time well spent because you will surely love how delicious this salsa is. 

We love munching on tortilla chips with our favorite dipping sauce every time my family would spend quality time watching games, so I can’t count how many times I’ve made this salsa, and my family would always ask for more. Ingredients:

  • 6 – 7 fresh Roma tomatoes (about a pound; no need to chop)
  • 30 oz fire-roasted tomatoes (two 15 oz cans)
  • 1 white onion, peeled and cut into 8 wedges
  • 3 jalapenos, tops cut off
  • 4 whole garlic cloves, peeled
  • 1 bunch of cilantro
  • 1 lime
  • 1 1/4 tsp salt (or to taste)
  • 1 bunch green onions, sliced

Directions:

Step 1

To start, put the whole tomatoes in your slow cooker followed by two cans of fire-roasted tomatoes, onion wedges, three whole jalapenos, and four garlic cloves. Put on the lid, set the slow cooker on high, and cook for three hours. After the cooking time, scoop out the ingredients with the juice into your blender, then add the cilantro.

Step 2

Blend everything well, then transfer them to a bowl. Add salt to taste, lime juice, and chopped green onion. Mix everything until well combined. Chill it for three hours, then serve with your favorite tortilla chips!
