Ingredients:
- 1.75 – 2.5 kg (3.5 – 5 pounds) Pork loin
- Olive oil
Spice Rub
- 2 tsp Paprika
- 2 tsp Thyme
- 1 tsp Garlic powder
- 1 tsp Onion powder
- ½ tsp Cayenne pepper, optional
- ½ tsp Pepper
- 2 tsp Salt
Honey Butter Sauce
- ¾ cup Honey
- 125g (½ cup) Butter, unsalted
- 5 cloves Garlic, minced
- ¼ cup Cider vinegar
- ½ tsp Salt
- ½ tsp Pepper
Sauce Thickener
- 3 tsp cornflour or cornstarch
- A little bit of water
Instructions:
Step 1
Clean and wash the pork loin well, then pat it dry. Drizzle about 1 teaspoon of oil onto it and rub all over the meat. Combine the paprika, thyme, garlic powder, onion powder, cayenne pepper, pepper, and salt in a small bowl. Sprinkle and season the pork loin with the mixed spices, rub and pat all over to incorporate the seasonings well. Place a large skillet on a stove over medium-high heat, then pour about 1 tablespoon of oil. Place the pork and sear all sides until it turns into a deep golden brown color but do not let the spices burn. Transfer the pork into a slow cooker and set aside while preparing the sauce.

Wipe the pan, then add and melt the butter. Toss the garlic and cook for 1 minute until it turns golden brown, then add the honey, cider vinegar, salt, and pepper. Stir it well and let it simmer for about half a minute. Pour the honey butter sauce over the pork loin on the slow cooker, cover, and let it cook on a low setting for about 4 to 5 hours (or 10 hours if you’re using a pork shoulder). Once done, remove the pork and transfer it onto a serving plate, then cover it loosely with a sheet of aluminum foil and let it rest for around 10 to 20 minutes. Transfer all the juices from the slow cooker onto a saucepan, then add the cornflour dissolved in water, mix it until well combined. Let it simmer over high medium heat for around 5 minutes or until the sauce thickens. Slice the pork thickly, then serve poured with a lot of honey butter sauce.
