The classic New Orleans cochon de lait (or suckling pork) recipe is made easy at home with this easy-to-follow recipe by MOMables – Laura Fuentes. Another low carb dish that anyone can healthily binge on.

What I really love about this recipe is that anyone can easily make it at home because of its versatility. It is also a dish that is worked on and shared with friends and family.

Prepare all the needed ingredients and measure as stated in the list above.
Place 3 pounds of sliced pork roast on a flat counter surface and pat dry using paper towels.
Generously rub the pork roast with about ¼ cup of the dry pork rub.
Once done, transfer to the dish of a 6-inch quart slow cooker. Then, add ½ cup of water, cover the lid, and set to cook for six hours on high pressure or 10 hours on low pressure. The cooking time will vary depending on the size of your roast.
Remove the tenderly cooked pork roast from the slow cooker and place it on a large cutting board half an hour before serving. Nicely shred the meat between 2 forks.
When done, place the meat back into the slow cooker. Stir the meat to combine and incorporate it with the cooking liquid.
Next, cover the lid back and cook for an additional 30 minutes on low pressure.
Prior to serving, prepare the creole coleslaw.
Lastly, assemble the dish on a platter, bowl, or inside French bread or buns.
