Easy Slow Cooker London Broil Ingredients

  • 2 lbs of london broil
  • 1/4 cup of low-sodium soy sauce
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of Worcestershire sauce
  • 1 3/4 cup of beef broth (divided)
  • 1 tablespoon of brown sugar
  • 1/2 teaspoon of dried rosemary
  • 1/2 teaspoon of dried thyme
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of olive oil
  • 1 medium onion (sliced)
  • 2 carrots (peeled and cut into chunks)
  • 2 potatoes (cut into chunks)
  • 4 garlic cloves
  • 1 tablespoon of cornstarch (optional)

 

How to Make London Broil Using a Slow Cooker

Step 1:

Make the marinade. In a medium bowl, add the soy sauce, balsamic vinegar, Worcestershire sauce, 3/4 cup of beef broth, brown sugar, dried rosemary, dried thyme, black pepper, and olive oil. Whisk well.

Step 2:

Place the London broil in a zip lock bag or shallow dish, then add the marinade. Coat the meat with the marinade, then seal or cover the dish. Refrigerate for at least 4 hours to overnight.

Step 3:

Place a skillet over medium-high heat. Add the marinated london broil and sear for 2-3 minutes per side. Once seared, transfer to a slow cooker.

Step 4:

Place the sliced onion, carrot chunks, potato chunks, and garlic cloves around the london broil. Add the remaining 1 cup of beef broth. It should fill halfway up the side of the meat.

Step 5:

Place the lid and cook on low setting for 6 to 8 hours or until fork tender. Once done cooking, remove the meat from the slow cooker and let it rest for 10 to 15 minutes before you slice it against the grain.

If you want a thick sauce, strain the liquid into a saucepan. Mix the cornstarch and a few tablespoons of cold water in a bowl, making the slurry. Add to the saucepan and let it come to a boil. Stir constantly until it thickens.

Step 6:

Serve the sliced meat with the cooked vegetables, then drizzle some of the sauce on top.
