These ultra-tender chicken thighs from Inspired Taste on Youtube are the perfect dinner recipe on a Sunday night. It’s super easy to make, slow-cooked to perfection, and has a lemony chicken gravy. Ingredients:

  • 6- 8 chicken thighs, skin-on, bone-in, trimmed of excess fat
  • 1 tbsp dijon mustard
  • 1 tbsp lemon zest
  • 1 & 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp fine sea salt
  • 1 tbsp olive oil
  • 1/4 cup lemon juice
  • 1 & 1/4 cups of low-sodium chicken stock
  • 2 tbsp all-purpose flour

Directions:

Step 1

In a bowl, combine 1 tbsp dijon mustard, half of the lemon zest, 1 & 1/2 tsp dried oregano, 1/2 tsp thyme, 1/4 tsp salt, and 2 tsp of olive oil. Measure out 1 & 1/4 cups of chicken broth and add the remaining lemon zest to it. Now, rub the chicken with the mustard mixture. You can sear the chicken first for two to three minutes but they can also go straight to the slow cooker at this point. Cover with a lid, set the slow cooker on low, and cook for five to six hours or until the chicken is tender.

Step 2

In a heated skillet, add 2 tbsp of all-purpose flour and 2 tbsp of butter and cook for a minute. Pour in the lemon juice and chicken stock mixture from earlier and stir until smooth. Bring the sauce to a low simmer and once it becomes thick, transfer it to a jar and refrigerate until the chicken is done. After six hours, transfer the chicken to a plate. Warm the lemon gravy you made earlier, then whisk it into the slow cooker and season with salt as needed. Place the chicken back into the slow cooker and you’re done.
