Here’s a yummy soup recipe that you can make in as fast as 20 minutes, no need for switching through the stovetop or your oven, you can just use your slow cooker all throughout! Step 1
Add the oil into your slow cooker making sure that it’s on the saute setting, then once the oil is nice and hot, you can add in the diced onion and carrot. Give them a good stir, then cook them for a few minutes before adding the garlic, and stirring them around. Add in the diced tomatoes and pour the vegetable stock as well. Season them with dried basil, dried oregano, dried thyme, salt, and ground black pepper.

Cover it with the lid, then cook it at a high-pressure setting for about 1 minute. Once the cooking time ends, allow the slow cooker to naturally release the steam for about 5 minutes before letting the rest of the steam release and remove the lid. Put it back to saute setting, then add in the fresh tortellini, give it a good stir, and cook for about 2 minutes. Cover the slow cooker and let the spinach wilt for a couple of minutes. Best served warm with a sprinkle of parmesan cheese.
