Ingredients:

  • 2 – 4 lb corned beef brisket
  • 1 white  onion, sliced
  • 2 lb red or gold potatoes, halved
  • 3 carrots, sliced thick
  • 2 garlic cloves, peeled
  • 1/2 head cabbage, cut into wedges
  • 1 1/2 cup water

For Serving:

  • parsley, for garnish
  • melted butter, for potatoes
  • horseradish (or stone-ground mustard)

Directions:

Step 1

To start, add the sliced white onion to the bottom of the slow cooker followed by the whole corned beef brisket and its seasoning packet, halved gold potatoes, sliced carrots, two garlic cloves, chopped cabbage, and 1 1/2 cup water. Put on the lid of the slow cooker, set it on low, and cook for eight hours.

Step 2
