This recipe is also quite easy to make as it all cooks in a slow cooker! No need for lots of preparations; just dump all the ingredients, wait for a few hours, and serve. Try this today and impress your family.

Ingredients:

  • 1 1/2 – 2 lb boneless skinless chicken breasts
  • 10.50 oz cream of chicken soup
  • 1 small yellow onion, diced
  • 15 oz black beans, drained
  • 1 jalapeno, seeds removed and minced
  • 7 oz Mexicorn, drained
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 14.5 oz chicken broth
  • 1 1/2 cups of red enchilada sauce

Add Later:

  • 1/4 cup finely chopped cilantro
  • juice of 1 lime

Tortilla Strips:

  • 8 yellow corn tortillas
  • 2 tbsp vegetable oil
  • 1/4 tsp salt

Other Toppings:

  • shredded cheese
  • avocado

Directions:

Step 1

To start, place the chicken breasts at the bottom of the slow cooker, then add 10.50 oz cream of chicken soup, diced onion, minced jalapeno, 15 oz black beans, and 7 oz Mexicorn. Season with 1 tsp cumin, 1 tsp garlic powder, 1 tsp onion powder, and pour 14.5 oz chicken broth along with 1 1/2 cups of red enchilada sauce. Mix well, place the lid on, and set the slow cooker on high. Cook for four hours.

Step 2

Once done, remove the chicken, shred them, then bring them back to the slow cooker. Add fresh lime juice and 1/4 cup of finely chopped cilantro. Mix well.

Step 3

Moving on to the tortilla chips, preheat the oven to broil first. Chop the tortilla wraps into small strips, then transfer them to a mixing bowl. Drizzle 3 tbsp cooking oil, then place them on a baking sheet, spreading them out evenly. Sprinkle some salt to taste. Broil them for three minutes, then start assembling the tortilla soup. Serve with some cheese, avocado, and the tortilla chips!
