Slow cooker meals are great for lazy dinners that you don’t want to put in a lot of effort, but still, have a hearty meal. Jessica Gavin on YouTube shows how to make tender pieces of chicken and vegetables all in a crockpot. It’s an easy recipe that is simmered in lemon garlic herb sauce. Also, if you prefer chicken breast you can switch if you do not like dark meat. I’m sure this recipe will make the chicken breast tender as well. The lemon garlic herb sauce infuses all of the flavors to the vegetables and chicken because it braises in the sauce for a couple of hours.

Ingredients:

  • 4 chicken thighs, bone-in
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup red onion
  • 1 1/2 cups carrots
  • 1 pound baby red potatoes
  • 1 ear corn
  • 2 tablespoons garlic
  • 1 1/2 cup unsalted chicken stock
  • 3 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 4 sprigs thyme
  • 2 sprigs rosemary

Directions:

First, place the chicken thighs in a large bowl and season with salt and pepper. Add oil to a pan and turn the heat on medium-high. Add the chicken skin side down to the hot oil and cook until golden for about 5 minutes.

Next, add the chopped onions, carrots, potatoes, corn, and garlic to the slow cooker. Then, add the lemon sauce, chicken, thyme, and rosemary. Cover and cook 2-4 hours on high or 4-6 on low. Continue to watch Jessica Gavin tutorial on YouTube for full instructions and details.

Overall, lemon garlic pepper is one of my favorite flavors and seasoning for grilled chicken. It makes it moist and it’s simple. Plus, it’s one complete meal all in one crockpot and can be made to meal prep throughout the week. I love meals where I can dump and go if I have busy nights, but still want a full meal.
