Step 1
Place a cast-iron or other heavy-skillet pan on a stove over medium-high heat, then heat up about 2 tablespoons of oil, and add in half of the beef cubes. Season them with ½ teaspoon of seasoning salt and fresh ground black pepper to taste. Let it cook for a couple of minutes before you start stirring, just sear the beef nicely and do not cook it through. Using a slotted spoon, remove the beef from the pan, and transfer it to the slow cooker. Add the remaining oil to the pan, then cook the remaining beef the same way, and season them with salt and pepper as well.

Step 2
Pour the beef broth and add the Worcestershire sauce, Italian seasoning, and thyme to the slow cooker. Sprinkle the diced onions and garlic all over the top, then tuck a piece of bay leaf, cover with the lid and cook it on low setting for about 5 hours or more, or cook it on high setting for about 3 to 4 hours, or until fork-tender. Pour the cornstarch dissolved in the water mixture into the slow cooker, then give it a good stir to thicken the sauce, and then continue cooking it on a low setting for 10 more minutes. Remove the bay leaf and then serve over mashed potatoes.
