If you ask me what’s the most comforting recipe for the winter season, it’s definitely this beef stew and dumplings from Lucy Parissi. It’s one of my favorite dishes to warm up my family, not just during the cold season but every time I need a hearty meal for dinner.

Ingredients:
- 2 lb braising/chuck steak, cubed
- 2 tbsp flour, seasoned with a pinch of salt and pepper
- 2 cups of hot beef stock
- 1/3 cup red wine (or dark ale or more beef stock)
- 3 tbsp tomato paste
- 2 tbsp balsamic vinegar (or Worcestershire sauce)
- 3 tbsp dark soy sauce
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp ground black pepper
- 2 large onions, finely diced
- 2 leeks, white parts only, sliced
- 5 carrots, sliced
- 4 parsnips, sliced
- 2 bay leaves
- 1 sprig rosemary
- freshly chopped parsley
For the Dumplings:
- 1 cup self-raising flour
- 1/2 cup fat-free yogurt
- 1 tbsp chopped parsley (or chives)
- 2 tbsp grated parmesan
- 1 tsp garlic granules
- 1/2 tsp salt
- water, as needed
Directions:
Step 1
To start, toss the cubed beef with 2 tbsp flour seasoned with a pinch of salt and pepper. Set aside. Next, add 2 cups of hot beef stock, 3 tbsp dark soy sauce, 2 tbsp balsamic vinegar, 1/3 cup red wine, two cloves of minced garlic, and 3 tbsp tomato paste in your slow cooker, then season with 1 tsp salt and 1/2 tsp ground black pepper. Mix well. After this, add the chopped onions, leeks, parsnips, and carrots. Stir them in to combine. Now, stir in the prepared beef, then add 2 bay leaves and a sprig of rosemary.

Step 2
Cover the slow cooker, set it to high, and cook for five hours. In the meantime, make the dumplings. Combine 1 cup self-raising flour, 1 tbsp chopped parsley, 2 tbsp grated parmesan, 1 tsp garlic granules, and 1/2 tsp salt in a mixing bowl. Mix well, then stir in 1/2 cup fat-free yogurt. Briefly knead the dough, adding water as needed. Once done, roll the dumplings and add them to the slow cooker. Cover again and continue to cook for another hour. Serve and enjoy!
