Ingredients:

  • 8 ounces bacon, roughly chopped
  • 2 tablespoons butter
  • 1 onion, diced
  • 5 cloves garlic, finely chopped
  • 1½ cups light cream
  • 1½ teaspoons cornstarch mixed with 1 tablespoon water (cornstarch slurry)
  • 1 pound broccoli florets, stems removed
  • Salt and pepper, to taste
  • ½ cup fresh shredded or grated mozzarella
  • 1/3 cup fresh shredded or grated parmesan cheese

Directions:

Step 1

Place a large oven-safe skillet pan on a stove over medium heat, then fry the bacon and cook until nice and crispy. Using a slotted spoon, scoop the cooked bacon and transfer them to a plate lined with a paper towel to soak up some of the excess greases, then set them aside. Make sure that you leave about 1 to 2 tablespoons or to your liking of bacon grease on the pan. Using the same pan, add the butter and let it melt, then add the onions, and cook them for about 2 minutes until it becomes translucent while scraping up any browned bits leftover from the bacon. Add the broccoli and season them with salt and pepper, then cook them for about 3 minutes while stirring occasionally or until it turns vibrant in color.

Step 2

Add in the garlic and stir it through the broccoli for about 30 seconds or until it becomes fragrant. Next, pour in the cream before reducing the heat down to a low setting, then let it simmer for about 3 to 4 minutes while stirring occasionally or until the sauce thickens to your liking. Put the bacon back into the pan and mix them all together until well combined and the flavors are incorporated into the mixture. Sprinkle some mozzarella and parmesan cheese on the top, then preheat your broiler before placing the pan inside. Let it cook for about 2 to 3 minutes or until the cheese is bubbling and golden, and the broccoli is done to your liking. Season them with more black pepper to taste if preferred. Garnish it with some chopped parsley, thyme, or rosemary.
