Step 1
Place a large oven-safe skillet pan on a stove over medium heat, then fry the bacon until nice and crispy. Using a slotted spoon, scoop and transfer them to a plate lined with a paper towel to soak up some of the excess oil, then set them aside. Using the same pan, melt the butter before adding the mushrooms, drizzle some olive oil, then give them a good mix until well coated with the oil. Scrape up the browned bits at the bottom of the pan, then continue frying the mushrooms for about 2 to 3 minutes or until lightly browned and the mushrooms have released their juices. Pour over the wine or broth, then let the liquid reduce for about 2 minutes while stirring occasionally.

Stir in the garlic and continue doing so for a minute. Now you can add in the cream and herbs, then reduce the heat to a low setting. Bring it to a gentle simmer until tender or for about 4 to 5 minutes and the sauce has thickened slightly. Season them with salt and pepper, then add the cooked bacon back into the pan, and then mix them all together until well combined. Sprinkle some mozzarella and parmesan cheese over the mushrooms. Then, pop the mushrooms in a preheated broiler or grill for about 3 to 5 minutes or until the cheese is melted and bubbly and the mushrooms are done to your liking. Best served warm!
