Ingredients:

Chicken

  • 2 pounds boneless and skinless chicken thighs
  • 1 teaspoon seasoning salt
  • ¼teaspoon pepper
  • 5 ounces bacon

Sauce

  • 2 tablespoons butter
  • 1 onion
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/3 cup dry white wine
  • 1½ cups half and half (thickened cream or heavy cream)
  • 2 tablespoons Dijon mustard
  • ½ teaspoon chicken bouillon powder
  • ½ teaspoon freshly ground black pepper
  • ¼ cup Parmesan cheese
  • 2 cups baby spinach leaves

Directions:

Step 1

Season the chicken with seasoning salt, pepper, and oil, then rub it in the chicken, and turn it over to season the other side as well. Place a large skillet pan on a stove over medium-high heat, then add about 1 tablespoon of oil and let it heat up. Place the chicken in the pan and cook them for about 8 minutes per side or until crispy and cooked through. Remove them from the pan and transfer them to a plate, then set them aside. Using the same pan, cook the bacon until nice and crispy, then transfer to a plate, and set aside. Drain some of the bacon fat and leave only about 2 tablespoons. Add the butter to the same pan, then once melted, add in the onion and saute them until translucent.

Step 2

Then, add the garlic, parsley, thyme, and rosemary, and cook them for about 1 minute or until fragrant. Pour the white wine, then scrape up the pan of any browned bits at the bottom, then let it simmer for about 3 to 4 minutes or until the wine has reduced by half. Pour in the cream and add the Dijon as well, stir them in until well combined then let it simmer. Lower the heat and cook for a few more minutes until the sauce has thickened. Add in the parmesan and let it melt before seasoning it with bouillon powder and pepper to taste. Add in the spinach and cook it until the leaves wilt before topping it with the crispy bacon. Garnish with your favorite herbs and serve.
