Ingredients:

  • 2 bags of frozen corn
  • 5 strips of bacon, or more as preferred
  • ½ cup of chopped onion, optional
  • 1¼ cup of heavy cream
  • ¼ cup of each cheese you prefer
  • 2 tbsp of sugar
  • 2 tbsp of butter
  • 1 tbsp of cajun seasoning
  • 1 tsp of salt, or to taste

Directions:

Step 1

Slice the bacon into smaller pieces, then preheat your skillet, and add the bacon pieces letting them cook slowly over medium-low heat for about 7 to 10 minutes or until crispy. Once cooked, remove the bacon, then place them on a plate lined with a paper towel to drain all of the excess oil, and set them aside. Use the same pan, then remove the excess grease, and add the chopped onions giving them a good toss. Let them cook for a few minutes, then add the corn, and cook them over medium heat. Season them with cajun seasoning, then give them a good stir, and cook until there is no more moisture left.

Step 2

Sprinkle the sugar, then toss them together, and add the butter letting it melt into the mixture. Pour the heavy cream, then stir them together, and reduce the heat to low before putting the cooked bacon back into the pan. Give them a good stir to combine, then add the cheese, and mix until melted and incorporated. Add more cheese, then broil it on high for about 3 to 5 minutes or until the top is brown and bubbly. Add more cheese on top while still hot, then sprinkle chopped green onions, and cooked bacon. Serve and enjoy!
