Ingredients:
- 4 cups yellow squash (sliced)
- 1/2 onion (chopped)
- 35 buttery round crackers (crushed)
- 1 cup cheddar cheese (shredded)
- 2 eggs (beaten)
- 3/4 cup milk
- 1/4 cup butter (melted)
- 1 teaspoon salt
- ground black pepper
- 2 tablespoons of butter

Instructions:
Step 1:
Preheat the oven to 400 degrees F.
Step 2:
Get a large skillet and bring the heat to medium. Place squash and onion then pour a small amount of water. Cover with the lid and cook until squash is tender for 5 minutes. The natural sugar of the squash comes out in this process. Once done, drain well and place in a large bowl.

In a medium bowl, mix cracker crumbs and cheese. Then combine half of the cracker mixture into the cooked squash and onions. Stir until incorporated. Spread the mixture into a 9×13 inch baking dish. Next, make the topping for the casserole. In a bowl combine crushed crackers and cheddar cheese, then sprinkle on top of the casserole. Next, put dotted butter on top.
Step 5:
Put the dish inside the oven and bake for 25 minutes or until lightly browned. After 25 minutes, your casserole is ready to serve!
