For the dressing:

Thinly slice a rib of celery by sliding the knife down the length of the rib four times. If it is extra wide on the bottom, slice it one or two more times. Then slice across to have small bits of celery. Now, finely chop the onions and dill.
Prepare the dressing. In a bowl, stir together the mayonnaise, lemon juice and zest, fresh dill, mustard, garlic, salt, and pepper. Once done, set it aside or you can place it in the fridge.
Get a pot and fill it with water. Bring it to a boil, then add the shrimp. Cook for about 2 to 3 minutes until cooked through and bright pink.
Prepare an ice bath while the shrimps are cooking. Just put some ice cubes and water in a bowl. Once the shrimps are cooked, remove them from the pot using a skimmer and put them in the ice bath. Let them cool for 3 minutes, then drain.
In a big bowl, stir together the cooled shrimp, finely chopped red onion, celery, and mayonnaise dressing until creamy. You can serve it plain or with butter lettuce leaves.
