You’ll only need a handful of ingredients already in your kitchen. It’s a budget-friendly recipe, especially if you have an abundance of zucchini in your garden and badly need a recipe for them. Learn how to make it by watching the video below for the step by step instructions.
To start, shred the zucchini and set aside. Next, remove the casing of the sausages and add the meat to the pan. Season with some ground black pepper, crushed red pepper flakes, and onion powder. Break the meat apart and cook until brown. After this, turn off the heat and set aside. Next, line a large mixing bowl with a kitchen towel or tea cloth, then add this shredded zucchini. Squeeze out the moisture from the zucchini, then transfer it to a parchment paper-lined baking sheet. Spread it nicely and evenly, then drizzle a bit of cooking oil.
Next, season with 1/2 tsp granulated onion powder, 1/4 tsp black pepper, and 1/2 tsp garlic powder. Set aside for a while. In a large mixing bowl, crack six large eggs, whisk, and season how you like it. Add 1/2 cup heavy cream and mix everything well. After this, sift 2/3 cup of all-purpose flour and 1 tsp baking powder. Fold in together until there’s no visible flour, then add 1 1/2 cups shredded parmesan cheese. Once done, spread it all over the shredded zucchini. Sprinkle more shredded parmesan cheese, then add the cooked Italian sausage. Finish it with one last layer of shredded cheese, then place the sheet pan in a 400 degrees F oven and bake for 25 to 30 minutes.
