This sheet pan apple pie recipe by Brian Lagerstrom is a new take on your favorite fall dessert. I have made different versions of apple pie before, but I can confidently say that this is definitely one of the best. Top it with ice cream, and you have a heavenly treat at home!
Ingredients
For the apple filling:
- 8 whole granny smith apples (diced)
- 1/2 cup of brown sugar
- 2 1/2 teaspoons of cinnamon
- 1 teaspoon of coarse salt
- 1/3 cup of cornstarch
- 1 tablespoon of lemon juice
- a small pinch of fresh grated nutmeg
Topping:
- 3 cups of all-purpose flour
- 1 cup of brown sugar
- 2 1/2 teaspoons of cinnamon
- 1 teaspoon of coarse salt
- 2/3 cups of chopped pecans
- 2 sticks of unsalted butter (melted)
For the crust:
- 2 sticks and 5 tablespoons of unsalted butter (frozen and grated)
- 3 1/3 cup of all-purpose flour
- 1/4 cup of sugar
- 1 1/4 teaspoons of salt
- 1/2 cup of ice cold water

Instructions
Step 1:
Make the filling. Add all filling ingredients in a bowl and toss until well combined.
Step 2:
Make the streusel topping. Add all ingredients in a bowl. Mix and fluff until combined and broken down into pea-sized pebbles.
Step 3:
Make the crust. To a food processor, add flour, sugar, salt, and grated frozen butter. Pulse about 4 to 5 times until they are combined into a coarse texture. Pour in half of the water, then pulse while pouring the other half. It should be pebbly at this point but still holds together when squeezed.
Step 4:
Transfer the dough into a bowl and press them together. Cover the dough with a plastic wrap that forms into a rectangle, leaving room on all sides. Pound and roll the dough into a flat rectangular shape of the wrap. Place in the fridge for about an hour.
Step 5:
Take the dough from the fridge, and let it sit at room temperature for about 15 minutes. Unwrap it and place it on a floured surface. Roll it onto a large rectangle about 15 inches by 20 inches. Roll it onto the rolling pin and unroll onto a well buttered half-sheet tray. Press the corners and crimp the edges.
Step 6:
Using a fork, dock the bottom of the crust, then add apples and all of the juices in the bowl. Spread them evenly then top with the streusel.
Step 7:
Bake it in a 375F preheated oven on top of a pizza stone or steel for about 45 to 50 minutes.
