Ingredients:

  • 2 tbsp olive oil
  • 2 russet potatoes
  • 3 tbsp butter
  • 1 cup shrimp
  • 3 minced garlic cloves
  • 1/4 cup chicken broth
  • 1 cup heavy cream
  • 1 tsp dijon mustard
  • 1 tbsp creole season
  • 1/4 cup parmesan cheese
  • 1 tbsp lemon juice
  • 1 tbsp parsley
  • 1/4 cup cheddar cheese
  • lump crab meat
  • sea salt

Directions:

Step 1

Coat the potatoes with an ample amount of olive oil, then season with salt and pepper. Poke some holes all over the potatoes using a fork. Put them in a baking dish and place them in the oven at 375 degrees F for one hour. Next, in a pan over medium heat, add the butter with creole seasoning. Once it melted, cook the shrimp for one minute on each side. Remove the shrimp and saute the minced garlic, then add the chicken broth, heavy cream, creole seasoning, dijon mustard, parmesan cheese, and lemon juice. Cook for some time.

Step 2

After the mixture thickened, add the lump crab meat, shrimp, and parsley. Cook until heated then set aside. Back to the potato, crack it in half, add butter on the center, and season with salt and pepper. Add the cheese followed by the shrimp mixture. Sprinkle some more shredded cheese on top.
