This loaf casserole is really different than ordinary casserole because it comes out as a crispy self-contained loaf and is filled with a bolognese type sauce with delicious spinach inside. The spinach is cooked into the ground beef and tomato sauce mixture and layered with cheese and thinly sliced potatoes and cooked to crispy perfection in a metal loaf pan.
Ingredients:
- 5 large potatoes (peeled and thinly sliced)
- 5 ounces of sliced cheese
- 1 tablespoon olive oil
- 1 large onion (chopped)
- 1 garlic clove (minced)
- 1 pound of ground beef chuck
- 2 teaspoons of paprika
- 14 ounce can of diced tomatoes
- 1 teaspoon freshly ground pepper
- 1 teaspoon of kosher salt (or sea salt)
- 8 ounces of fresh spinach leaves
- 2 tablespoons parsley (for garnish)
