Mix the dry ingredients. Place a sifter directly on a large mixing bowl. Add the rising flour, baking powder, mustard powder, and turmeric, then sift to remove any lumps.
Add the diced cold butter and rub it to the flour until it resembles fine bread crumbs.
Add the grated cheddar cheese to the mixture. Mix until well incorporated.
Add the milk to the dry mixture and cut with an ordinary dinner knife until well combined. Start bringing it together with your hands. It will be dry at first, but don’t be tempted to add extra liquid. Stop as soon, as you feel it’s all together, as you don’t want to overwork the dough. Form it into a rectangle.
Grease a 16 x 12-inch baking tray and preheat your oven to 390F.
Add a little flour to your working surface and the dough. Using your rolling pin, lightly roll it out into a 7 x 5-inch rectangle about 1 inch in thickness. Once you have the initial rectangle, cut 6 cones that are 2 1/2″ in diameter. Gently fold the scrap pieces together and cut two more scones. You don’t need to use a scone cutter, you can also cut them in squares if you like.
Add a little bit of cheese onto the tray where you’ll put each of the scones. Then place the scones on top. Brush a little milk on top of each piece. Do not use egg wash for this. Next, add a little cheese on top of each scone.
Place inside the oven and bake for 15 minutes. Once done, let them cool in the wire rack for a few minutes. Serve with butter and enjoy!
