If you have leftover rice, this is the perfect recipe for it. It is customizable, so if you don’t have all the ingredients in hand, that is okay. Add celery, cajun seasoning, and chicken to this dish, and it would be Jambalaya. It is packed with flavor and is great for sharing. Give this delicious recipe a try.
Place a cast iron over medium heat and add olive oil. Once hot, add the sausage slices and cook until browned.
In the same pan, add the onion and saute over medium heat for 1 minute. Next, add the peppers, and mix. Cook until softened.
Add minced garlic and continuously stir to avoid burning. Season with salt and black pepper. Transfer to a bowl.
In the same pan, add the shrimp and season with creole seasoning. Coo until no longer pink. Transfer to a bowl.
In the same pan, add the tomato paste and 3/4 of the chicken stock. Mix then bring to a simmer. Lower the heat then add the paprika and cayenne pepper. Let it come to a soft boil.
Add the rice, sausage, and veggies. Mix to combine, then cook for a minute. Pour the remaining chicken broth and stir. Cook for a few minutes, then mix in the shrimp.
