This mouthwatering salted caramel brownie trifle recipe by Bigger Bolder Baking will surely be the star of your dessert table! Ingredients:

Brownie:

  • 4 tablespoons of unsalted butter (cold)
  • 10 oz of good quality chocolate
  • 1 1/2 cups of firmly packed brown sugar
  • 4 whole eggs (beaten lightly)
  • 2 teaspoons of vanilla extract
  • 1 1/2 cups of all-purpose flour
  • 1/2 teaspoon of kosher salt

Salted caramel sauce:

  • 1 cup granulated sugar
  • enough water to cover the sugar
  • 6 tablespoons of unsalted butter (cut into 6 pieces)
  • 1/2 cup of heavy cream
  • 1/2 teaspoon of salt

Salted caramel mousse:

  • 1 cup of salted caramel sauce
  • 2 tablespoons of granulated sugar
  • 2 packs of cream cheese (room temperature)
  • 3 cups of heavy cream (cold)

Chocolate sauce:

  • 8 oz semisweet or bittersweet chocolate
  • 1 cup heavy cream

Instructions:

For the brownies:

Step 1:

Preheat the oven to 350 degrees Fahrenheit. Prepare a greased 13×9-inch baking pan and line it with parchment paper.

Step 2:

Add butter, chocolate, and sugar in a medium saucepan over medium heat. Stir until smooth, then set it aside. Let it cool down.

Step 3:

Add the eggs, vanilla, flour, and salt to the mixture. Stir then pour into the prepared tin. Bake for about 25 minutes. Make sure not to overbake it. Once done baking, set it aside and let it cool completely.

For the salted caramel sauce:

Step 1:

Place a medium saucepan over medium heat. Add the granulated sugar and keep stirring with a rubber spatula. It will form into clumps and then melt into a thick brown liquid. Be sure not to burn it.

Step 2:

Immediately add the butter once the sugar is completely melted. Stir for about 2 to 3 minutes.

Step 3:

Slowly drizzle 1/2 cup of heavy cream into the mixture. Take note that it will rapidly bubble and/or splatter when you add the heavy cream, as it is colder than the mixture. Allow it to boil for a minute.

Step 4:

Remove from heat and add 1 teaspoon of salt. Allow it to cool completely.

 

For the salted caramel mousse:

Step 1:

Put the cream cheese on a stand mixer and beat it at medium-high speed until smooth and lump-free for about 4 minutes.

Step 2:

Add in the salted caramel sauce and sugar. Continue beating on high until fluffy for another 3 minutes. Whip it until soft peaks form.

Step 3:

Divide the cream in half, one for the mousse and the other for the layers.

Step 4:

Fold 1/2 whipped cream into the cream cheese mixture, then let it chill in the fridge until needed.  Place the other bowl in the fridge until the assembly of the trifle.

For the chocolate sauce:

Steps:

Heat the cream then pour the chopped chocolate. Whisk until smooth, then set it aside.

 

Assembling of trifle:

Step 1:

Get a large trifle dish. Start crumbling the fudge brownie and add it to your dish. Make some of the bits chunky.

Step 2:

Spoon over the salted caramel sauce to moisten the brownie. Next, scoop a large spoonful of the salted caramel mousse and spread it around to the edges. Drizzle the chocolate sauce. Then spoon whipped cream then spread it to the edges.

Step 3:

Repeat the layers: crumbled brownie, caramel sauce, caramel mousse, chocolate sauce, whipped cream

Step 4:

On the top, crumble more brownies and drizzle the sauces.
