In the bowl of your stand mixer, add 1 packet of dry active yeast and 1/4 cup warm water. Stir and let it sit for 10 to 15 minutes. Next, melt 4 tbsp unsalted butter in a small saucepan over low heat and add 1 cup milk. Set it aside. Back to the yeast, add 1 tbsp honey, 1 tsp salt, and 2 tsp minced fresh rosemary leaves. Stir, then add 2 1/2 cups of your flour and your warm milk butter mixture. Mix everything using your stand mixer, then gradually add the remaining of your flour. Keep mixing until the mixture turns very soft.

After this, form the dough into a nice ball, put it back in the mixing bowl, and drizzle 2 tbsp olive oil. Cover the bowl with aluminum foil and leave it in a warm spot for about 1 1/2 hours to 2 hours. Once the dough doubles in size, transfer it to your working surface, and form it in a rectangle. After this, divide it into equal strips, then divide those strips into equal portions. Now, take those pieces and form them into small balls. Place them on a lined baking sheet in neat rows and columns.
After this, brush the tops with egg wash, then sprinkle some coarse sea salt. Place them in the oven and let them rise for 20 to 30 minutes. After they rise, remove them, then preheat the oven to 375 degrees F. When the oven’s preheated, put them back inside, then bake them for 20 minutes.
