It’s well-seasoned, roasted to perfection, and tastes so delicious. My family frequently requests this for our side dish, and I can’t blame them; these potatoes are such a delight. To start, wash the potatoes thoroughly and transfer them to a big pot along with some cold water and 1/3 cup of kosher salt. Place it over high heat and let it come to a simmer. Once it simmers, lower the heat to medium-low and gently simmer until the potatoes are tender. After this, drain them well and let them cool enough to room temperature. After they cool down, transfer them to the fridge until completely chilled through.

In the meantime, make the infused butter. In a saucepan, melt 1/2 cup of unsalted butter over medium heat along with four sprigs of fresh rosemary, four sprigs of thyme, and four cloves of thickly sliced garlic. Set it aside. Next, remove the potatoes from the fridge and start smashing them one by one. Once they’re smashed, season each with salt, ground black pepper, and cayenne pepper on each side. Place the smashed potatoes in a greased and lined baking tray, spreading them out nicely and evenly. After this, brush the infused butter over the top of each potato, then place them in a 450-degree F oven for 35 to 45 minutes or until well-browned.
