  • olive oil
  • 1 lb Italian sausage
  • red potatoes, quartered
  • 4 cloves garlic, smashed
  • 4 – 6 varied bell peppers
  • 2 red onions, quartered
  • 2 sweet onions, quartered
  • salt and pepper to taste
  • 2 tsp rosemary

Directions:

Step 1

Start putting the onions, bell peppers, red potatoes, and smashed cloves of garlic together in the cast-iron skillet. Season it with some salt and pepper to taste and 2 tsp dried rosemary. After this, drizzle some olive oil over everything.

Step 2

Once you are done drizzling the oil put the cast-iron skillet in a preheated oven at 450 degrees F and cook it for about 35 minutes. While waiting, cut your sausage into thirds. After 35 minutes, remove the skillet from the oven, then nestle the pieces of sausage in the skillet until you get them all evenly distributed. After this, put it back in the oven and cook for about 25 to 30 minutes until the sausage is cooked all the way through.
