It’s creamy and so flavorful, and the sauce is just perfection. You have to make this for your next pasta night; I’m sure your family will love this. Ingredients:

  • 12 oz ridged rigatoni
  • extra-virgin olive oil
  • 4 large garlic cloves, crushed and peeled
  • 3 large roasted red peppers (roast ahead of time)
  • 1/2 cup whole milk (or milk of your choice)
  • 1/2 tsp dried oregano
  • 1/2 tsp Spanish paprika
  • kosher salt
  • ground black pepper
  • 1/4 cup grated parmesan, plus more to your liking
  • a handful of fresh basil leaves, torn, for garnish (optional)

Directions:

Step 1

To start, cook your rigatoni pasta in a large pot of boiling water. In the meantime, add some olive oil in a medium pan over high heat, then saute your crushed garlic. Once done, transfer the garlic to your food processor, then add 3 large roasted red peppers, 1/2 cup whole milk, a pinch of salt and ground black pepper, 1/2 tsp dried oregano, and 1/2 tsp Spanish paprika. Put on the lid and start blending.

Step 2

Back to the pasta, keep about 1 cup of pasta water aside, then drain it. Place the drained pasta back in the pot, then add the blended sauce. Mix well, adding a bit of pasta water as needed to help the consistency become creamier. Finally, stir in 1/4 cup grated parmesan, then serve. Add torn fresh basil leaves on top for garnish. Serve and enjoy!
