This one sheet pan-roasted chicken and potatoes recipe by Sisi Jemimah’s Recipes on YouTube makes weeknight dinners easy. This is a great way to cook a full meal on one sheet in the oven. I think it’s the perfect way to roast chicken and potatoes with simple ingredients. This recipe calls for lots of seasoning, which I love because I have all of these readily available in my pantry. I love using a lot of seasoning because it adds a ton of flavor, and sometimes I just throw everything together. It usually turns out good and adds a pretty color in the end. Plus, you can add more vegetables to this baking sheet. I love broccoli, and I think it would add a nice variety of colors to this meal. Also, this is a great way and healthy recipe to meal prep for the week.
First, mix the spices and seasonings into a bowl. Then, use and rub the seasoning on the chicken and vegetables. Leave and marinate the chicken for about an hour. Make incisions in the chicken so the spices can get inside of the cuts.
Next, after the marination, arrange the chicken onto a roasting or baking tray. Spread the vegetables on top and in the same tray as the chicken. Use cooking oil and brush it onto the chicken. Bake at 340F for about 40-50 minutes.
