Ingredients:

  • 1 head of cauliflower
  • 3 slices of lemon
  • a handful of dill
  • 1 1/4 cups panko breadcrumbs
  • 1 clove of minced garlic
  • 3/4 cup all-purpose flour
  • 3 eggs
  • 5 tbsp olive oil
  • 1 tsp Italian herbs
  • a handful of chopped parsley
  • 1 cup grated parmesan cheese
  • salt, to taste
  • ground black pepper, to taste

Sauce:

  • 3/4 cup sour cream
  • 1/2 cup yogurt
  • freshly chopped parsley
  • salt and ground black pepper
  • lemon juice

Directions:

Step 1

Cut the cauliflower into florets and set them aside. Next, cut three slices of lemon and drop them into salted boiling water along with a handful of fresh dill and the cauliflower florets. Cook for five minutes. In a large mixing bowl, add 1 1/4 cups panko breadcrumbs, 1 clove of minced garlic, 5 tbsp olive oil, 1 tsp Italian herbs, salt to taste and ground black pepper to taste, a handful of chopped parsley, and 1 cup grated parmesan cheese. Mix everything until well combined. Once five minutes is up, drain the cauliflower and set aside.

Step 2

Next, add 3/4 cup all-purpose flour to a plate and crack three eggs in a bowl. Whisk well. Now, start coating the cauliflower: dredge first in the flour, then in the whisked eggs, and finally to the breadcrumbs mixture. Repeat these until you finish all the cauliflower. After this, place them in a parchment paper-lined baking tray. Once finished, place the baking tray in a 350 degrees F oven and bake for 20 minutes. In the meantime, make the sauce. Combine 3/4 cup sour cream, 1/2 cup yogurt, freshly squeezed lemon juice, finely chopped parsley, and salt and ground black pepper to taste in a small bowl. Mix well. Remove the cauliflower from the oven once done roasting. Serve with the sauce. Enjoy!
