Ingredients:

  • 2 lb broccoli, cut up
  • 2 lemons
  • 1 garlic head
  • olive oil
  • honey, as needed
  • 1/4 cup parsley, optional

Directions:

Step 1

Preheat your oven to 435 degrees F. Pour some olive oil into a baking dish, cut the lemon in half, put the lemons cut side down, and sprinkle a little salt over them. Next, cut the top off the whole head of the garlic, put a little olive oil on top, and wrap them with foil. Put it in the oven together with the lemons. Bake them until they are soft and golden brown, about 45 minutes. Cut the broccoli florets, put them in a big bowl, then add some olive oil, salt, and pepper. After 25 minutes, put the broccoli directly into the baking dish and bake all the way through the baking time.

After 45 minutes, remove them from the oven. Put the garlic in a small bowl and crushed them with a fork. Squeeze all the pulp of the lemon directly into the bowl with the garlic. Mix and taste and just add more lemon if needed. Add some salt and pepper to taste and a bit of olive oil. Add a bit of honey to balance out the acidity. After mixing, put the roasted broccoli in and toss gently.
