This rich mini chocolate bundt cake by Baking Cherry is heaven for all the sweet lovers out there! The super fluffy cake and the chocolate ganache on top will surely satisfy your cravings. I shared this recipe with my friends and family and it was an instant hit. It’s definitely a 10 out of 10.

Ingredients:

  • 1 cup of all-purpose flour
  • 2/3 cup of granulated sugar
  • 1/4 cup of unsweetened cocoa powder
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • a pinch of salt
  • 1 large egg at room temperature
  • 1/4 cup of unsalted butter (melted and cooled to room temperature)
  • 1/2 cup of slightly warm water

For the chocolate ganache:

  • 2/3 cup of milk chocolate (chopped or chips)
  • 2 tablespoons of milk at room temperature

Instructions:

Step 1:

In a large bowl, sift 1 cup of all-purpose flour, 2/3 cup of granulated sugar, 1/4 cup of unsweetened cocoa powder, 1 teaspoon of baking powder, 1/4 teaspoon of baking soda, and a pinch of salt. Mix until well combined.

Step 2:

Add 1 large egg, 1/4 cup of unsalted melted butter, and 1/2 cup of slightly warm water. Gently mix the ingredients until just combined and smooth in texture. Make sure not to overmix it.

Step 3:

Spray a mini bundt pan or silicone mold with cooking spray or you can also use softened butter and dust the mixture with flour and cocoa powder. Make sure to cover all surfaces to prevent the cakes from sticking. Fill 2/3 of each cup.

Step 4:

Bake in a preheated oven at 350F for about 20 minutes or when a toothpick comes out clean when inserted in the center.

Step 5:

Once done baking, allow the cakes to cool for approximately 5 minutes, then remove each one from the mold. Place them in a cooling rack and let them cool completely.

Step 6:

While waiting for the cake to cool make the ganache. Add 2/3 cup of milk chocolate to a heatproof bowl and microwave in 30-second intervals until fully melted. Add 1 and 1/2 tablespoons of milk to the chocolate and mix until well combined. If it’s too thick, add 1 teaspoon of milk one at a time. Test the consistency on the inner side of the bowl.

Step 7:

Pour the chocolate ganache on top of the cakes using a small spoon or small piping bag.
