Add the 2 tablespoons of butter and 3 tablespoons of olive oil into a big pot. Once the butter is melted, add the chopped onion. Stir and cook until fragrant. Next, add the minced garlic. Keep stirring to keep it from burning. Cook for about 5 minutes.
Add the 2 cans of whole peeled tomatoes and the 3 cups of water or chicken stock. Next, season it with 1 tablespoon of sugar, salt, and 1/4 teaspoon of black pepper. Bring to a boil and let it simmer for 30 minutes to reduce the liquid and intensify the flavors.
Once boiling, reduce to a simmer, then continue cooking for 30 minutes. Add the thyme oregano and mix.
Remove from heat. You can use a potato ricer or masher and mash it all together. But you can also use an immersion blender. Make sure not to over-blend your soup! The olive oil will taste really bitter. You just want a nice silky texture.
Add the 3/4 cup of heavy cream and mix. Taste and adjust the seasonings if needed. Fill a bowl then top with basil leaves. Serve and enjoy!
