Preheat the oven to 340 degrees Fahrenheit and line a 7″ square baking tin with parchment paper.
Add 1/2 cup of unsalted butter and 3/4 cup of sugar to the bowl of a stand mixer. Mix until pale and creamy.
Beat in one egg at a time. Next, add 1 teaspoon of vanilla extract, 1 teaspoon of distilled white vinegar, and 1 tablespoon of red food coloring. Mix until well combined.
Sift 1 cup of flour and 2 tablespoons of cocoa powder into the mixture, then add 1/4 teaspoon salt. Fold the mixture gently until well incorporated.
Reserve 1/4 cup of red batter and transfer the rest into the prepared tin.
With a clean mixer or bowl, beat the cream cheese and sugar until smooth. After that, add 1 egg and vanilla extract. Mix until well combined.
Pour the cream cheese batter on top of the red brownie batter and then get your reserved red batter and dot the top. Using a knife or stick, create swirls in the top layer.
Place in the preheated oven and bake for 30 minutes until it has set.
Once done baking, let it cool completely then refrigerate. Serve and enjoy!
