Ingredients:

  • 2 to 2.5 lb beef chuck roast
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp cooking oil
  • 1/2 small onion (diced)
  • 5 cloves garlic (minced)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 4 & 1/2 to 5 cups low sodium beef broth
  • 5 guajillo chiles (or New Mexico chiles)
  • 1 pasilla chile
  • 1 chile ancho
  • 1 tsp Mexican oregano
  • salt and pepper to taste

Directions:

Step 1

For the chile puree, get one pasilla chile, one ancho chile, and five guajillo chiles. Remove their stems and seeds and rinse them. Next, place them in a pot of water and bring them to a boil. Once it starts boiling, turn off the heat, cover with a lid, and let it steep for about 20 minutes. Once they’re pliable, transfer them to a blender. Add 1 cup of low sodium beef broth, and 1 tsp of dried Mexican oregano. Blend well until puree consistency. after this, set it aside. In a bowl, add 2 & 1/2 lb of beef chuck roast that has been cut into bite-size pieces. Add 1 tsp of salt and 1/2 tsp of black pepper. In a preheated pan with 3 tbsp of cooking oil, add the meat and cook it until brown. (Turn on the heat to high at this point.) Add the onion and garlic and give it a good mix. Add 1 tsp garlic powder, 1 tsp onion powder, and 1 tsp ground cumin.

Step 2

Make sure that the liquid evaporated completely and the meat browned nicely before adding the chile puree. Add 3 & 1/2 to 4 cups of low sodium beef broth to the blender, give it a swirl to pick up any residual chile puree left, and add it to the pot. Add a dash of salt and 2 dried bay leaves, give it a good mix, and bring it to a simmer. Cover the pot with a lid, lower the heat, and let it cook and simmer for about 1 hour and 30 minutes to 1 hour and 45 minutes. (Be sure to season with salt to taste.)
