This side dish is famous for its creamy and flavorful taste. It’s a combination of shredded cabbage, shredded carrots, vinegar brine, and mayonnaise that complement well with each other. I always order this whenever I go out, but I must say, this homemade recipe is so much better. It has the perfect balance of flavors that is just delicious. In a large bowl, add 1/3 cup of sugar, 1/2 cup of grated onion, 3 tablespoons of vegetable oil, 1/2 teaspoon of white pepper, 1 1/4 teaspoons of salt, 1/3 cup of white distilled vinegar, and 1/3 cup of water. Whisk until well combined.
Add the shredded cabbage to another large bowl and pour the brine. Mix everything using a tong. Making sure everything is well coated. Next, add the shredded carrots and mix again. Cover it with cling wrap and refrigerate for at least 2 hours or overnight. Halfway through the refrigerating process, mix it again.
The next day, drain the cabbage-carrot mixture to remove excess moisture. Add the mayonnaise and mix until smooth. You can add more mayo to get a creamy consistency. Taste the coleslaw and adjust salt and pepper if needed. Serve and enjoy!
