Directions:
Prepare all the needed ingredients.
Over medium-high heat, heat a large skillet.
Cook the uncased 1-pound mild Italian sausage until browned. Add 1 jar or 24-ounce of marinara sauce along with ½ cup water. If desired, ½ teaspoon of crushed red pepper to taste. Sauté and bring the sauce to a boil. Once boiled, lower the temperature until it is just simmering.
While simmering, stir 20 ounces of cheese tortellini into the sauce. Cover the skillet. Let the cheese tortellini simmer for about 5 minutes.
Next, mix together 1 cup ricotta, ¼ cup grated parmesan, ½ cup shredded mozzarella, 1 tsp of dried basil, and 1 tsp of dried oregano. Also, sprinkle in some salt and pepper to taste. Add and stir in 3 cups of baby spinach into the tortellini. Then, drop spoonfuls of the cheese mixture over the top.
Cover the skillet and let the cheese tortellini cook for 5 more minutes to warm up the cheese.
To serve, top with additional parmesan cheese and chopped parsley, if desired.
Serve and have fun!
