These cooked-to-perfection potatoes from Cooking With Claudia on Youtube are so deliciously good; you’ll never get enough of them! They’re buttery with just the right amount of tenderness and crispiness to them, and they’re seasoned well. Your family will be clearing their plates in no time for sure.

Ingredients:

  • 6 gold potatoes, about 1.5 lb
  • 1 large onion
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried parsley
  • 1/2 tsp dried thyme
  • 1 tsp adobo seasoning
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 1/3 cup chicken broth

Directions:

Step 1

Peeled and thinly slice each potato. (Make sure the slices aren’t too thin or too thick.) Heat your cast iron skillet over medium heat, then add some oil and butter. Once the butter melts, add the sliced potatoes and sliced onion. Mix them together. Next, season them with dried parsley, adobo seasoning, paprika, garlic powder, dried thyme, cayenne pepper, salt, and black pepper.

Step 2

Once the spices have mixed in very well with the potatoes, saute everything over medium heat for five minutes. Make sure to stir them in periodically, that way they don’t burn. Each time you stir them in, place a lid over them and leave them to cook for a few seconds. Repeat the process until the five minutes are up. Next, add some chicken broth and mix it in gently. Turn your heat down to low heat, place a lid over them, and let them smother in the sauce for five minutes.
