Don’t know what to eat tomorrow morning? Here are two quick breakfast quesadilla omelet recipes by Farrah’s Kitchen. These are the perfect meals for busy or lazy days – super easy to make and taste incredibly good.
Ingredients
Tortilla 1
- 3 tablespoons of oil (divided)
- 1/2 onion (diced)
- 1/2 red and green bell peppers (diced)
- 2 eggs
- salt and pepper to taste
- 1 tortilla
- shredded mozzarella cheese
Tortilla 2
- 2 eggs
- 2 tablespoons of chopped green onion
- salt and pepper to taste
- 1 tablespoon of oil
- 1 tortilla
- 1/2 tomato (cut into thin slices)
- shredded cheddar cheese

Instructions
Tortilla 1
Step 1:
Start by adding 1 tablespoon of oil into a pan over heat. Next, add the chopped onion and bell pepper. Saute for 3 minutes, then transfer to a bowl.
Step 2:
In a different bowl, add 2 eggs and some of the sauteed vegetables. Season with salt and pepper, then beat with a fork.
Step 3:
In the same pan, add 1 tablespoon of olive oil and pour the mixture. Make sure to spread it. Cook for 2 minutes over medium heat, then add a tortilla and cook for another minute. Press it with a spatula, then flip it over.
Step 4:
Add shredded mozzarella cheese on one side and fold it in half. Cook for 1 minute until the cheese is melted. Transfer to a plate and slice it into four triangles.
Tortilla 2
Step 1:
In a bowl, add 2 eggs and 2 tablespoons of green onions. Season it with salt and pepper, then beat with a fork.
Step 2:
Add 1 tablespoon of oil into a pan and pour the mixture. Spread it evenly by tilting the pan. Cook for 3 minutes over medium heat.
Step 3:
Add the tortilla and press it flat. Cook for 1 minute then flip it over.
Step 4:
Sprinkle some mozzarella cheese on one side, add tomato slices, and then the remaining cheese.
Step 5:
Fold it in half and cook for 1 minute until the cheese is melted. Transfer to a plate and slice into four triangles.
