Ingredients:

  • 3 cans of tuna
  • 3 slices of fresh bread
  • 1/2 red onion
  • 1/2 red bell pepper
  • 2 green chilies
  • 5 garlic cloves
  • 2 medium tomatoes
  • small bunch of cilantro
  • juice of 1/2 lemon
  • 1/2 tsp dijon mustard
  • salt and pepper to taste
  • 3 large eggs
  • 1 cup vegetable oil

For the coating:

  • 3 large eggs
  • 2 cups bread crumbs

Directions:

Step 1

Drain the tuna and transfer them to a bowl, then mash them so they will become flaky. Next, cut down 3 slices of bread and put them in a food processor to make them into breadcrumbs. After this, add them to the tuna. Next, prepare the veggies. Roughly chop half of a large red onion, cut down 2 green chilis, mash 5 garlic cloves, and cut half of the red bell pepper. Add each to the food processor and add them to the tuna mixture. Roughly chop 2 tomatoes (remove the seeds), dice them, and also add them to the mixture. To give the tuna cakes a fresh flavor, add a bunch of cilantro and chop it down nicely and fine. Season it with the juice of half a lemon, 1/2 tsp of dijon mustard, and some salt and pepper. Next, add 3 beaten eggs into the mixture and give it a good mix to incorporate all the ingredients.

Step 2

Beat 3 eggs in a bowl, then add some breadcrumbs to a surface or a plate. Use s scooper and scoop out some mixture into your hands. Dip it into the beaten eggs first, then coat it with the breadcrumbs. Repeat this process for the rest of the tuna mixture. Next, add some cooking oil to a heated pan and fry the tuna cakes. Flip it as soon as it’s golden brown on one side. Remove them from the pan once they’re golden brown on both sides.
