In a large bowl, combine 1 box of yellow cake mix, 1/2 cup vegetable oil, 3/4 cup evaporated milk, 3 large eggs, and 1 tsp vanilla extract. Turn the mixer on (or use a handheld mixer) and mix everything until well combined. Next, fold in 1 can of undrained crushed pineapple. Grease your baking dish and pour the cake batter into that, then put it in the oven at 350 degrees F and bake for 35 to 40 minutes. While waiting, make the topping.

In a small saucepan, add 1/2 cup of salted butter, 2/3 cup of evaporated milk, and 1 cup of packed brown sugar. Mix until the butter fully melts and everything is well combined. Once the butter melted, bring the heat up a bit, then simmer it for five minutes uncovered. (Keep stirring while it cooks to prevent it from sticking at the bottom.) After five minutes, remove it from the heat, then stir in 1 tsp vanilla extract. Next, add 1 cup of chopped walnuts (or pecans) and 1 cup of sweetened shredded coconut. Mix everything well, then set aside.
Once the cake finishes baking, remove it from the oven and take a wooden skewer and poke holes into the cake. After this, pour the topping and spread it evenly over the cake. Let everything set for 30 minutes before serving.
