With just 7 ingredients, you can make these quick and easy salmon patties by Jenny Can Cook. They are incredibly delicious and have these surprising flavors. My family loves eating salmon and this is one of our favorite recipes. It’s super easy to cook and won’t even take you more than 15 minutes in the kitchen. Note: you can also make fresh bread crumbs at home. Remove the crust from a slice of whole wheat bread and cut into small pieces. Place inside a food processor and blend until it becomes crumbs.

Drain the salmon and place them in a bowl. Mash them well with a fork.
Add 1/4 cup of finely diced red onion, 1/4 cup of finely diced red pepper, 1 tablespoon of chopped parsley, egg, and 1/2 cup of fresh whole wheat bread crumbs into the mashed salmon.
Divide the mixture into four equal amounts, then gently shape each one into a patty using your hands. Do not press it down too much to keep it light. Form the edges and flatten the top.
Place a large pan over heat and add one teaspoon of olive oil. Tilt the pan to spread the oil. Once hot, get the patties using a spatula and place them on the pan. Cook them for about 2.5 minutes, then turn them over and cook the other side for another 2.5 minutes over medium heat. Flip them really quickly. You want your patties to get browned and cooked through.
