Pasta is my ultimate comfort food. So, I’m sharing this amazing recipe I recently learned from Mr.Make It Happen– it’s called the quick and easy creamy Tuscan salmon pasta. The flavors were beyond what I expected. The salmon was perfectly cooked, and the sauce was well seasoned. Try it at home – it’s definitely a winning dish on any occasion!

Make roasted garlic. Chop the end of the garlic head, peel some of the skin off, and place it on aluminum foil. Preheat the oven to 400F. Add 1 tablespoon of olive oil and season with salt and pepper. Cover it with the foil and place it in the oven for 40 minutes.
Cook the pasta noodles based on the package instructions.
Season the salmon with all-purpose seasoning.
Place a pan over medium heat. Add some oil and 1 to 2 tablespoons of butter. Once melted, add the seasoned salmon skin side up. Press firmly and cook for about 60 to 90 seconds then flip. Cook the other side for another 60 to 90 seconds. Once cooked, remove and place on a plate.
Add the diced onion to the same pan then turn the heat down to low. Saute for a little bit. Add 1/4 cup of capers, a few roasted garlic cloves, and cherry tomatoes. Cook for 1 to 2 minutes.
Add the spinach and mix. Increase the heat to high and add heavy cream. Mix and bring it to a simmer. Season with all-purpose seasoning and red pepper flakes. Taste as you go. Mix parmesan cheese and reduce heat to medium-low heat. Cook until the sauce is thickened.
Bring back the cooked salmon and allow it to finish cooking. It should be 135F to 145F when done.
Sprinkle chopped parsley then place on top of pasta with the sauce. Serve and enjoy!
