Ingredients:
- 8.8 oz of boneless chicken cut into 1″ thin strips
- cooked rice (6 cups and a day old)
- 3 eggs
- 6 cloves of garlic (finely sliced)
- 1/4 teaspoon of salt (a pinch for seasoning)
- 1/2 teaspoon of pepper powder
- 3 teaspoons of dark soy sauce
- 1 teaspoon of white vinegar
- 1 cup of cabbage (shredded)
- 1 cup of carrots (julienned)
- 1 cup of green peppers (julienned)
- 3 tablespoons of spring onions
- 3 tablespoons of refined oil

Instructions:
Step 1:
In a wok, heat 1 tablespoon of oil and add 3 beaten eggs. Season with a pinch of salt. Gently mix and scramble over medium heat for 1 minute. Transfer onto a plate, then set aside.
Step 2:
Clean the wok using a paper towel, then add 2 tablespoons of oil. Add the finely sliced garlic and fry over high heat for 30 seconds. Next, add the chicken strips and cook for 1 minute until they turn white. Add the salt and pepper powder, mix and stir fry for 3 minutes till the strips turn brown.
Step 3:
Pour 1 teaspoon of soy sauce, mix and cook for about 2 minutes on medium heat. Next, add the julienned carrots and peppers. Fry for another 2 minutes. Once done, add the shredded cabbage and continue to fry for another 1 minute on high heat.
Step 4:
Add the rice and mix with the chicken and veggies. Season with a pinch of salt and 1/4 teaspoon of pepper powder. Stir the fried rice. Pour 1 teaspoon of white vinegar and 2 teaspoons of dark soy sauce. Give it a toss and fry for another 2 minutes on medium heat. Lastly, add the scrambled egg and spring onion. Toss, then serve.
