Crack two eggs in a mixing bowl, then add 1/4 cup heavy cream, a pinch of salt, and ground black pepper. Whisk until blended smoothly. Set aside. Next, dice two slices of fully cooked deli ham and chop the buds of the thawed broccoli into smaller pieces. Add these to the egg mixture along with 1/4 cup shredded cheddar and 2 tbsp dried minced onion. Stir well. (Preheat your oven to 375 degrees F at this point.)
Take six slices of firm brioche bread and cut a hole into each center as large as possible. After this, place each piece into the muffin tins, gently push them, and form a crust base. Brush each crust base with softened unsalted butter. Now, divide the mixture into each cup, filling them up to the brim. Once done, place them in the preheated 3754 degrees F oven and bake them for 20 minutes. After baking, remove them from the oven and let them cool for at least ten minutes in the muffin tray.
