Preheat your oven to 350 degrees F. To a large bowl, add 1 cup oat flour, 1/4 cup rolled oats, 1/2 cup coconut sugar, 1 tsp cinnamon, 1/2 tsp pumpkin pie spice, 1/2 tsp baking soda, and 1/2 tsp sea salt. Mix well. Next, add 1/2 cup pumpkin puree, 1/4 cup melted coconut oil, one egg, and 1 tsp vanilla extract. Mix everything well together. Now, add your ad-ins: 1/3 cup unsweetened shredded coconut, 1/3 cup chocolate chips, and 1/3 cup chopped pecans. Fold them in until combined.

Line your baking sheet with parchment paper and set aside. Now, take a heaping spoon of cookie dough, put it in your hands, then gently form into a cookie. Place it on the lined baking sheet.
