Ingredients:

  • 1 cup oat flour
  • 1/4 cup rolled oats
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/4 cup melted coconut oil
  • 1/2 cup pumpkin puree
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup coconut sugar
  • 1/3 cup unsweetened shredded coconut
  • 1/3 cup chocolate chips
  • 1/3 cup chopped pecans

Directions:

Step 1

Preheat your oven to 350 degrees F. To a large bowl, add 1 cup oat flour, 1/4 cup rolled oats, 1/2 cup coconut sugar, 1 tsp cinnamon, 1/2 tsp pumpkin pie spice, 1/2 tsp baking soda, and 1/2 tsp sea salt. Mix well. Next, add 1/2 cup pumpkin puree, 1/4 cup melted coconut oil, one egg, and 1 tsp vanilla extract. Mix everything well together. Now, add your ad-ins: 1/3 cup unsweetened shredded coconut, 1/3 cup chocolate chips, and 1/3 cup chopped pecans. Fold them in until combined.

Step 2

Line your baking sheet with parchment paper and set aside. Now, take a heaping spoon of cookie dough, put it in your hands, then gently form into a cookie. Place it on the lined baking sheet. Repeat these steps until you finish up your cookie dough mixture. Once done, place them in the preheated oven and bake for 15 minutes. After baking, remove from the oven and cool completely before serving.
