One of the most common questions people ask when they make these cookies at home is how much sugar is needed. For this recipe, you will need 2/3 cup of light brown sugar and 1/2 cup of granulated sugar. Another important factor to consider is the flour. Get a strainer and press the pumpkin puree against it or you can place it in a double layer or paper towels. Make sure to remove the excess water so your cookies will have a nice chewy texture.
In a large bowl, sift the flour, baking soda, baking powder, salt, and spices. Whisk to combine then set aside.
Mix the melted butter and sugar in a bowl, once melted add the vanilla. After that, mix in the pumpkin.
Combine the flour mixture and mix until just combined. Reserve a handful of chocolate chips, then add the remaining to the mixture. Fold to incorporate. Cover it and let it chill for at least 30 minutes, preferably 1 to 2 hours.
Preheat your oven to 350F. Using a triggered ice cream scoop or a tablespoon, portion the batter into 1.5 to 2 inch balls then roll each into a ball using your hands.
Place them on a baking sheet lined with parchment paper about 2 inches apart and put reserved chocolate chips on top. Place inside the oven and bake them for about 350F for 11 minutes.
