It’s that time of year where I want all of the pumpkin-flavored things. Pumpkin bread is such a staple on my Fall dessert list and this recipe by Bigger Bolder Baking on YouTube is one of the best pumpkin bread recipes. It’s such a classic Fall dessert or bread recipe to make for the holidays or the season. In my opinion, the maple glaze is what does it for me. I think it compliments the bread well, and that’s what makes this recipe stand out. I love having glazes on top of my bread because it does add extra moisture. Plus, this doesn’t require many ingredients at all, and it’s packed with pumpkin flavors and aromatic spices. The pumpkin bread looks very soft and moist.

Ingredients:

  • 1 cup pumpkin puree
  • 1 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 1/3 cup milk
  • 2 eggs
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

For the Glaze:

  • 1/2 cup (4oz/115g) butter
  • 1 cup (4oz/115g) powdered sugar (start with one cup and add more if the glaze is too runny)
  • 2 tablespoons maple syrup

Directions:

First, in a bowl, mix pumpkin puree, sugar, oil, milk, and eggs until well combined. Mix the dry ingredients in a separate bowl, then gradually pour into the pumpkin mixture until it’s combined.

Next, pour the pumpkin bread mixture into a 9×5 loaf pan that’s lined with parchment paper. Bake at 350F for 55-65 minutes, or until done.

As the pumpkin bread cools down, make the maple glaze to go on top. I would still add the glaze while the bread is a bit warm. The glaze would add a perfect touch and finish to the bread which will make it perfectly sweet. This can be easily made in one bowl because it’s all whisked by hand.
